MAIN: MOROCCAN VEGETABLE SPELT COUSCOUS

Ingredients 
2 tsp vegetable oil
2 green onions (diced)
1 red pepper (sweet)
1 garlic clove (minced)
2 tomatoes (diced)
1 zucchini (diced)
1 cup chickpeas (cooked)
1 cup boiling water
1/4 tsp sea salt
1/2 tsp curry powder
1 tsp ground cumin
2 tbsps fresh parsley
1/8 tsp ground cinnamon
1/2 tsp ginger
1/4 tsp cayenne
1 cup couscous
 

Directions: 
1 In a medium-size pan heat the oil. 
2 Add green onions, sweet pepper, garlic, tomatoes and zucchini; saute 5 min, stirring. 
3 Remove from heat and keep warm. 
4 In a medium-size saucepan, combine the remaining ingredients, mix, cover and let stand 5 minutes, until liquid is absorbed. Add the first mixture and fluff with a fork.
