SWEETS: SPELT GINGERBREAD

INGREDIENTS

120g warmed up butter 
110g raw sugar 
400g spelt flour 
110g honey 
1 tsp salt 
2 tsp cinnamon 
1 fresh chopped ginger (approx. half a finger size) 
1 egg 
1 tsp baking powder 
1 tsp baking soda 
a little allspice (cardamon, anisseed, fennel, cloves, black pepper, vanilla) 

METHOD

Mix all ingredients with a fork. Wrap dough in cling film, leave in fridge for 1 hour. Preheat oven 220 degrees. Put baking paper in tray, put chilled dough flat in tray and bake for approx 15 minutes. Let the bread cool down and cut into squares.
