Spelt is an ancient grain that is high in fiber, protein and nutrients. Spelt is the healthier alternative to wheat and rice. Studies show it lowers the risk of heart disease, stroke, type 2 diabetes, certain cancers and obesity.

This highly digestible pasta can generally be better tolerated by those who are wheat sensitive or diabetic.

Preparation and Usage

For 3-4 persons. Pour 250ml of water in a large saucepan, add 1 tblsp Extra Virgin Olive Oil, 1/2 tsp. Sea salt and some cracked pepper and bring to boil. Remove from heat. Stir and pour in 250g of spelt couscous and allow to swell for 2 mins. Add extra 2-3 tsp. of olive oil and heat again on very low heat for 3 mins while stirring with a fork to separate the grains.
